Starting a blog for me means sharing some of my favorite things. I love to cook and bake! So, it seems like a 'Tash' kind-of-thing to share a recipe on my first post. Oh, and I happen to be making this soup right now, too!
I remember having this soup on a youth progressive supper... many years ago! I always wanted it again, and not until recently, did I find a recipe that nailed my memory. It's so easy and good!
Orzo Soup
9 cups water
1/4 cup beef soup base
4 large carrots, thinly sliced
4 stalks celery, thinly sliced
1 large onion, chopped
1/4 tsp. pepper
1 tbsp. oregano
1 cup orzo noodles
1 heaping tbsp. cornstarch
4 cans tomato soup
Put water, beef soup base, carrots, celery, onion, pepper, and oregano into a large pot and bring to a boil. Simmer for 30 minutes, or until vegetables are tender. (I also like to add a tablespoon of Clubhouse Greek seasoning or Garlic plus seasoning, it just adds that 'something').
Add orzo noodles, and cook for 20 minutes. Dissolve the one heaping tablespoon of cornstarch into one cup of cold water (this way, you'll have no lumps!), and add it to your soup. Then add the 4 cans of tomato soup. Cook until orzo noodles are completely done!
I was thinking that I would love to make my breadsticks recipe for this tonight, but I don't have any cheese. And yeah, I will post that recipe too!
